Related to the grapefruit, this guy tasted like a super mild and extra sweet version of a pink grapefruit – yum! That super thick rind does NOT want to peel off and reminds me of cotton candy or insulation in its texture.

At el jimnasio, I ran a 5k:
  • Mile 0-0.75: 6.4mph, incline 1
  • Mile 075-1: 6.4mph, incline 2
  • Mile 1-1.5: 6.5mph, incline 1
  • Mile 1.5-2: 6.5mph, incline 2
  • Mile 2-2.25: 6.6mph, incline 1
  • Mile 2.25-2.5: 6.6mph, incline 2
  • Mile 2.5-2.75: 6.6mph, incline 1
  • Mile 2.75-3: 6.6mph, incline 2
  • Mile 3-3.1: 7mph, incline 1

Finished in about 28:40, with a 9:14 minute per mile average. I jumped over to the elliptical for 15 minutes on mountain setting, level 7 and finished with 15 minutes on the stair mill, rolling hills level 5. It was a really good workout! Not too hard and not too easy – juuuuust right!

La cena perfecta consisted of:

  • Half a can of tuna with celery, plain Chobani, and deli mustard with romaine on a Joseph’s tortilla
  • Sweet potato half moons roasted in the oven, with salt, pepper, and organic ketchup
  • Overly roasted brussels with s&p

I honestly wasn’t hungry the rest of the night. I snacked on a piece or two of pomelo with some seltzer because I was thirsty and it sounded good (which it was), but I didn’t need my usual 4th meal. Yay filling food!

Last night I watched Reservation Road a la Netflix, with some of my favorites – Joaquin Phoenix, Jennifer Connely, Mark Ruffalo, and Elle Fanning, Dakota’s little sister. She looks just like her! I honestly thought it was Dakota until I IMDB’ed it. I didn’t know it when I started watching, but they filmed part of the movie in Connecticut! They even shot at my FAVORITE breakfast/brunch place – The Olde Bluebird Inn in Easton. I was seriously so excited when I recognized it. They also shot at Lake Compounce, an amusement park I’ve been to multiple times, including with my campers the past few years – so cool!

Let’s rewind to last year …

I cooked for dinner! Cooked REAL FOOD!

Curried Chickpeas, adapted from this recipe.

  • 1 can of chickpeas
  • 3/4 c onion
  • 1 tbsp curry powder
  • Salt
  • Pepper
  • 1/2 tsp garlic powder
  • 2 c spinach
  • 1 tsp dried basil

I sprayed a skillet with Pam and sauteed the onions until they were transparent. I threw in the chickpeas, spinach, and spices and cooked on medium heat until the spinach was wilted, about 10 minutes. I also sprayed the pan/chickpeas/spinach with more Pam as they cooked.

I also made lemon ginger tofu, based on this recipe:

  • 1/3 box of cubed, super firm tofu – about 3 oz.
  • 1 tsp dried ginger
  • 1/2 tsp TruVia
  • 1/4 tsp garlic powder
  • 1/4 tsp cayenne
  • Lemon juice

I threw all the dry ingredients in a small bowl and used some leftover lemon to squeeze for the juice – probably about 3/4 of a lemon – maybe 1/4 cup of juice?

While I was prepping the rub and the chickpeas, I pressed my now-defrosted tofu, including this piece in the shape of Connecticut:

Then I baked at 375 for 30 minutes, flipping the cubes halfway through cooking:

The chickpeas are good! I still have half of what I made, but I think I’ll add more onions and some peas to the leftovers. With the lemon ginger tofu, there were too many strong flavors going on. I didn’t eat the tofu with dinner and threw it in the fridge to save for later.

Throughout the night, I had some pumpkin pie:

Actually, my hair doesn’t smell like curry. I showered after the gym. But it did!

It’s pretty good! Spicier than I was expecting and not too sweet. I had a strawberry Chobani with granola later on, but you’ve seen that.

got me to 5 in 47:02. I love you, Elliot Stabler. I also did some reps on the hip adduction and abduction machines and the glute machine. That’s all it is called, apparently. Just glute. Anyway, I came home and made a semi-new lunch:

The holidays aren’t over until after New Year’s, right? Here’s what it looks like out of the box and “unwrapped.” The tea bag itself is very nice – almost like silk. And I love the tiny leaf for the string!

So cute! I really loved the Winter Chai flavor. It was perfectly spiced and sweet. Definitely reminded me of winter, but I can picture it tasting amazing iced in the summer too, with milk. The sweetness was seriously perfect. I didn’t need to add any sweetener but it wasn’t at all overpowering. I can’t wait to try the other flavors!

The cup there is double-insulated, so it keeps the tea warm but your hands cool. It was really fun to use, I even had another cup of tea (the last of my Candy Cane Lane 😦 ) in it a little while later!

I was really craving veggies and volume today, so dinner part two was another salad:

Dinner part two last night was muy delicioso:

HUGE chopped fuji, Fage, Kashi Heart to Heart

Sooo good. I really liked splitting my dinner into two parts.  I got more in nutrient-wise and didn’t snack again before bed – my apple crisp kept me really satisfied the rest of the night.  I didn’t sleep any better though :(.

I woke up and waited over an hour to eat breakfast, which ended up being a shocker.

Just kidding.

Pomegranate Chobani with Kashi Heart to Heart

I waited til around 11:30 to head to the gym.  My quads were kind of tired this morning, and so was the rest of me, but I figured I’d get into it.  On my way over, I figured I’d do 4 miles.  However, I’m officially bored of the treadmill.  I ended up doing a circuit, per usual:

  • 2 miles in 18:28
  • 10 minutes walking at 3.5mph at incline 8
  • 15 minutes on the stair mill
  • 15 minutes on the elliptical

I was STARVING and cranky when I got home.  My quesadilla could not cook quickly enough.  It’s ugly, I warn you.

Told you.  Is it too late to ask Santa for a quesadilla maker?

For next time: leave out the diced tomatoes, add back in the salsa, maybe Fage in the wrap?  And definitely some Frank’s.

My brother and I watched Harry Potter and the Half-Blood Prince (again) while we waited for dinner .. 3 hours later.  I snacked on some fruit:

banana, grapes, clemmie

Christmas Eve dinner was so good!  I had a baked (in the oven!) sweet potato that tasted like it had butter and maple syrup on it – but not, just nature.  I might write an ode to the sweet potato one day …

Anyway, I also had some green beans with salt and pepper and Omaha Steaks scallop and crap stuffed sole.  YUM.  I heart seafood. No pic.

My step-dad picked up some French ice cream and sorbet dishes from a French bakery nearby.  Honestly, ice cream in the winter does not appeal to me at all.  There was vanilla and chocolate ice cream and raspberry and strawberry sorbet.  I had a taste of my brother’s vanilla – odd texture and way too sweet.  Almost chemically – ick.  Instead, I heated up some apple crisp – shocking, I know.

1/2 a fuji and a Kashi Pumpkin Spice Flax granola plank

I don’t know why I waited so long to try the Pumpkin Spice Flax flavor – it’s so good!  I guess I’m just in love with Honey Toasted 7 Grain.  I’m going to wait to taste it on its own before I do a full review.

Now I’m watching Love Actually per my self-imposed tradition and heading to bed.  Merry Christmas!

Good afternoon!  I just had the best lunch EVER.  But before we get there, let’s backtrack …

Last night I had a few dried apricots right before bed.  Even though I was exhausted, I ended up not falling asleep til around 1!  And I woke up at 5:30 and couldn’t get back to sleep 😦  I eventually got up and made some Candy Cane Lane, read blogs and farmed for about an hour and was able to pass back out til a little before 9.  I guess it was that 3 hour nap yesterday .. oops!

Brekkie was disappointing:

3/4 c Fage 0% Plain, 3/4 c Kashi Heart to Heart, 1 c frozen blackberries, 1 c frozen strawberries

The blackberries were so bad.  I guess they were freezer burned to the extreme.  Ironically, the strawberry bag was open in the freezer and they were fine!  I didn’t eat any of the blackberries after I tried them 😦  Opening a new box of Heart to Heart was exciting though – the first handful from a freshly opened bag always tastes the best.  It’s the little things, people.

I set off to Target to finish my Christmas shopping and mail some packages.  Well, my car making weird and loud noises, a FedEx that I thought was a UPS and one closed-down post office later, I gave up and came home to eat.  But we were out of what I had been craving/dreaming about so I went to Stop & Shop since I was frustrated and breakfast wasn’t so great.  This is what I got:

La Tortilla Factory wraps, guacamole, Amy’s burritos, TruVia (from Target), low sodium black beans, sweet potatoes, and two movies – Stand By Me and Clue (also from Target)

I went just for the wraps and black beans, but .. you know.  I decided he guacamole would be an amazing addition to lunch, and the burritos were 2 for $5 … and my mom asked me to get the potatoes.  The two movies from Target were $5 each!  And I wonder I am legitimately broke.  Not okay, really.

BUT LUNCH WAS SERIOUSLY AMAZING. For some reason, I really wanted a black beans quesadilla.  Obviously I had to give in to my cravings.

The Best Dang QuesadiLLa Ever:

  • La Tortilla Factory wrap in Traditional (they didn’t have WW 😦 )
  • plain Laughing Cow wedge
  • 1/2 cup low sodium black beans
  • Plus 0% plain Fage, salsa, and guacamole for dipping/slathering purposes

I Pam-ed a large skillet and spread the LC wedge on half of the wrap.  I added the 1/2 cup of black beans so the cheesy side of the tortilla and carefully put it in the pan.  I let it brown up a little while I got my dippings ready and flipped it with my hands to avoid bean spillage.  After letting the other side toast for a little, I flipped again, less carefully, resulting in some bean leakage – hence, the random scattering of beans on top of the quesadilla.  No harm done.

I forgot how good guacamole is!  I got the 100 calorie snack packs of Wholly Guacamole for easy portion control and only used half here.  Honestly, next time (like, for dinner.  Sorry in advance.) I’d just use salsa and the guac.  I use Greek yogurt for everything else but guacamole is JUST TOO GOOD.  Monday is quesadilla day in our dining hall and I always got them last year.  This year, however, and my awareness of the probably less then stellar ingredients of the ginormous tortilla, questionable chicken, trans-fat filled cooking oil, most likely HFCS-filled guac and full fat sour cream restrained me.  This honestly tasted better than those (which, at the dhall isn’t hard) and is SO much healthier.  Score!  Seriously though, this will probably be dinner too.

I’m making some coffee to take to go FINALLY ship these books out and then I might go running at the trail (not too cold today) or just go to the gym before/after dinner later.  Usually I prefer to get my exercise in in the mornings, but going to the gym in the late afternoon/evening hasn’t been bad at all!  Plus I usually have extra energy then.  Wish me luck!

This is going to be quick since my day was nothing out of the ordinary and I’m super sleepy!

I woke up at 7 to go the gym, but I realized I wouldn’t have time to get in everything I wanted to shower, get ready, and get to my friend’s house by 10 so I pushed it back. I lounged around with some coffee before making breakfast.

A little bit on the bigger side for me since I didn’t know when I’d be able to eat lunch. I got ready and met my friend at her house before we headed to New Haven. We stopped at IKEA where she picked up some Christmas presents and I admired all of the home decorations I want for my nonexistent apartment. Then we headed to Urban Outfitters where I admired all of the clothes I can’t afford 😦 Christmas can’t come soon enough! It doesn’t seem like it was that long, but our trip ended up being about 3 hours with all the weird and unnecessary traffic we hit going home. For some reason we were both exhausted (and cranky) and just couldn’t wait to get back! I rushed home to quiet my rumbling tummy. Lunch was extremely green!

I devoured it (SO GOOD!) and promptly passed out for 3 hours. How old am I??? I woke up intending to head to the gym, but I had to wait for my brother to get back with my car. While I was waiting, I ate this half of a banana:

I intended to just go the elliptical and stair master today since my legs were a little tight and sore from yesterday’s 5 miler, but when I finally got to the gym, I felt like running. I banged out a 5k (3.1 miles) in 28:28 and then ellipticalled on random for 10 minutes + a cool down.

Real hot cocoa is so good! As much as I rely on the packets, this was so yummy and satisfying! I’m seriously exhausted – still catching up from finals I guess? Watching The Office and passing out. Good night!
Highlight of the day: Getting almost $50 ($47.38) in change turned into cash at the bank! Yay spare change!
P.S. Yes, I eat almost every meal and snack on Santa and my snowman bowl. Don’t worry, I was them every time!

Good afternoon!

Yesterday afternoon I snacked on some carrots with hummus and sriracha:

Which was an awesome combo but gave me a stomachache for a few hours 😦 Sriracha, why have you forsaken me?

My mom was roasting a chicken for dinner and we stopped at the grocery store and on the way from my grandma’s. I was craving green beans, so I picked up a 5 pound bag. Oh well, I’m sure I’ll get through it!

Dinner was yummy! And not something that has been repeated 24723894 times in the past month:

Due to the snow/ice and my horrible driving skills, the gym did not happen yesterday. I did end up doing some core yoga from a YogaDownload.com podcast. Um – it was not easy but I obviously didn’t try hard enough because my abs aren’t even sore today.
One of my goals for this break is to actually get strength training in. I’ve done yoga the past three days, which is definitely counts for me! I also really want to be able to get into a balanced Airplane pose without having one hand on my dresser/falling over and dying. Also, not on a rock in the ocean. But whatever. After yoga-ing, I snacked on some grapes that I grabbed at the grocery store – that were $12!!! And SO not worth it. But we won’t tell my mom that.
This morning I woke up and debated breakfast and when to go to the gym. Nothing sounded super appealing, and I decided I’d rather get the gym over with for the day. So I had half of this bar of greatness:

Plus coffee with skim, TrueVia, and cinnamon before heading to the gym. I did 5 miles (painfully boring) in 46:28, averaging a 9:17 minute mile. Here’s what I did:
  • Mile 0-1: 6.2 mph
  • Mile 1-2: 6.3 mph
  • Mile 2-2.5: 6.4 mph
  • Mile 2.5-3: 6.5 mph
  • Mile 3-4: 6.6 mph
  • Mile 4-5: 6.7 mph

Simple, but effective! I had to take a quick walk & water break around mile 3.75 and then really just wanted to get it done. I wish I could have run outside but its so icy and I highly doubt the trail is super safe to run on. It is melting a lot out though, so maybe tomorrow!

I cooled down for 10 minutes, walking 3 mph at a 5.0% incline, and ate the other half of the Clif bar on the way out of the gym.

Taste:
Really good! Not the strongest gingerbread taste, but still really close. Loved the icing and the fact that it was drizzled, not coated – it was vanilla-y.  4/5.
Texture:
Chewy, soft, and nutty like a normal Clif. 5/5.
Fill Factor:
Gave me energy for my first 5-miler in a while, although the run itself could have been better. Other half held me over after the gym til now – about 1.5 hours.  5/5.
Ingredients:
Very long list, but nothing too scary – and 70% organic! Plus lotssss of vitamins and minerals! 22g of sugar in the whole bar – a lot – but good for pre- and post-run fuel. 4/5.

Comments: Great seasonal flavor! Definitely would buy it again.

Off to make a great lunch I’ve been planning since last night. Normal.
