I need to head to bed, so we’ll do this quick and in a time-blocked manner. My plan changed a bit from what I posted yesterday!

7:30am – Wake up, blow dry and straighten hair, get ready for my last first day of classes!

8:30am – Breakfast with some of my sisters: Cheerios, banana, rice milk, and coffee to go with skim and Splenda.

9:30am – Nutrition Through the Life Cycle. Moves fast, but prints slides and posts them online. Love this class already.

11am – Stand in line for 45 minutes to get refund check from Bursar’s office. Worth it.

11:45am – Read the first chapter of my nutrition book for review. Get overly excited about RDIs and vitamin intake. Diagnose self with 92348429 deficiencies. Realize I am a hypochondriac. Eat my packed lunch from yesterday – spinach, hummus, raisin wrap and an orange. You already saw it.

12:30pm – Medieval English Literature. I just “learned” this all in Brit Lit. Beowulf again, oh joy.

1:00pm – Get out of class super early. Head to bank to deposit mad moneys. Curse the weather yet again – instead of predicted snow, it is raining. And very cold. I decked out in snow gear, not rain. The two are very different.

1:20pm – Head to cafe to read more nutrition, play with my friend that works there, and drink an Awake tea with skim and Splenda.

IMG00087.jpg

1:25pm – Wonder when my nutrition book will tell me to stop inhaling Splenda.

3:30pm – Emotion in Literature and Film. Spend 1.25 hours going over a syllabus I can understand, as a senior in college, by myself. Die inside a little. Munch a Spooky S’mores bar whose picture my Blackberry ate.

4:45-5:20pm – Wait for bus. In lieu of waiting for Blue line, get on Green line to get to Red line stop.

5:45pm – Finally get on a bus home. Surprised I haven’t started crying. Maybe I have, and mistook it for rain.

6:00pm – Eat some dried apricots.

6:30pm – Head to off campus gym with sister for free week from her membership.

6:45pm – Join off campus gym. They have TVs, air conditioning, classes, and a spa-like bathroom. I want to be friends with the front desk girl.

6:50pm – Ellipticize for 30 minutes on level 10 of rolling hills. Realize I am now technically paying for 3 gym memberships. Acknowledge my hardcore-ness.

7:25pm – 3.1 miles in 28:44, half on iPod, half on The Office. Wonder if weight lifters next to me are judging me for laughing out loud. I love you, Jim.

8:00pm – Stop at CVS to buy bright purple lock for new gym. Feel even more hardcore.

8:45pm – Finally eat dinner. Focus not on taste, but talking with friends. Feel like a real person again.

love.burrito Veggie Fajita (review soon) + carrots with roasted red pepper hum

9:30pm – Be amazed that there is hot water this late in our house/condo/dorm.

10:00pm – Eat organic piñata apple.

IMG00091.jpg

10:29pm – Hit publish. Apologize in advance for super lame, Blackberry picture filled post.

I’ll be honest – I kind of lost track of the day after Christmas.

I’m assuming this was dinner?

Shrimp and black bean burrito with guac and hot sauce + carrots and salsa
It was great and NEW!
  • La Tortilla Factory wrap
  • Romaine (would shred it next time … good thing I eat with my family)
  • Black beans
  • Leftover shrimpies
  • Laughing Cow
  • Guacamole
  • Frank’s Red Hot

While impatiently waiting for your burrito to cook, this is a good snack:

PC260022.JPG

Is guac the new hummus?

I also found it necessary to have two salsas for carrot dippage/burrito slatherage: Tostitos and this newbie:

PC260021.JPG
You know you’re a foodie when you get specialty salsa in your Christmas stocking.

It’s pretty good! Spicier than I was expecting and not too sweet. I had a strawberry Chobani with granola later on, but you’ve seen that.
Yesterday’s breakfast was nothing new but still amazing.
PC260031.JPG
Chopped warmed fuji, cinnamon, TruVia, skim, and Kashi Heart to Heart

I headed to the gym, intent on 4 miles on the treadmill trying not to fall off out of boredom. However, this guy

stabler.jpg

got me to 5 in 47:02. I love you, Elliot Stabler. I also did some reps on the hip adduction and abduction machines and the glute machine. That’s all it is called, apparently. Just glute. Anyway, I came home and made a semi-new lunch:

PC270033.JPG PC270034.JPG
Shrimp and black bean salad!
  • Romaine
  • Peas
  • Corn
  • Sugar snap peas
  • Shrimp
  • Black beans
  • Annie’s Lite Gingerly Vinaigrette

Plus a side of Kashi crackers in Original 7 Grain. So good! And filling, until those 5 miles caught up to me and I needed a Santa snack plate.

PC270044.JPG
Carrots, sugar snap peas, hummus and Frank’s

Dinner part one was pretty obvious:
PC270057.JPG
Sweet potato with black beans, Fage, and Frank’s Red Hot

I also had a new tea with dinner. My step-aunts gave my mom this cool tea cup and set from Tea Forte:
PC270050.JPG PC270049.JPG
It includes:
  • Sweet Orange Spice
  • Winter Chai
  • Crimson Nectar
  • English Breakfast
  • White Ambrosia

I chose the Winter Chai, described as:

PC270051.JPG

The holidays aren’t over until after New Year’s, right? Here’s what it looks like out of the box and “unwrapped.” The tea bag itself is very nice – almost like silk. And I love the tiny leaf for the string!

PC270053.JPG PC270054.JPG PC270055.JPG

I followed the directions:

PC270052.JPG
And got this:

PC270056.JPG

So cute! I really loved the Winter Chai flavor. It was perfectly spiced and sweet. Definitely reminded me of winter, but I can picture it tasting amazing iced in the summer too, with milk. The sweetness was seriously perfect. I didn’t need to add any sweetener but it wasn’t at all overpowering. I can’t wait to try the other flavors!

The cup there is double-insulated, so it keeps the tea warm but your hands cool. It was really fun to use, I even had another cup of tea (the last of my Candy Cane Lane 😦 ) in it a little while later!

I was really craving veggies and volume today, so dinner part two was another salad:
PC270058.JPG
Romaine, corn, black beans, salsa, and guac with a toasted sandwich thin.

With my baby Little Mermaid fork because otherwise I take huge bites and eat too fast. I ended the night with a clemmie:

Have a great day!
Edited to add:  Don’t miss Iowa Girl Eats’ VitaTop giveaway here!  Or wait, actually do, because I WANT THEM!

Yes, I am slowly going insane as I rot in my kitchen chair for hours on end, replaying the Wicked soundtrack while my brother begs me to stop. He’s so anti-musical. And anti-fun.

In an effort to reduce the stress-induced hump that my back and shoulders are forming, I did end up heading to the gym last night. I spent 15 minutes on the elliptical, 20 on the treadmill – averaging a 9 minute mile, and then 15 on the StairMaster. I think that the treadmill was flat out wrong about what speed I was going. I can easily keep up at 9:30 mile outside, but it’s ALWAYS harder on the treadmill in the gym at school. But yesterday, at my gym here at home, it was easy. I even kept up a 7mph pace for quite a while, hence the 9 min/mile average. And on an incline. I just don’t think that’s right. The treadmills at school are Precor and this one was a Cybex – does anyone know if they’re known to be inconsistent or different at pacing? Maybe I’l google it.

Before the gym there was snacking:

PC120493.JPG PC120494.JPG
Yummy clementines!

Anyway, I came home sweating and not-yet-starving and so made a little bit more effort with dins:

PC120503.JPG PC120501.JPG PC120502.JPG
Amy’s Black Bean Burrito + Fage and Frank’s with carrots, celery, and cukes to dip in Sabra Spinach and Artichoke Hummus.
More effort = making my Amy’s burrito in the oven instead of the microwave. Aside from a crispier burrito, no difference!
My brother had the Burrito Espcial:
PC120495.JPG PC120497.JPG
Mine:
PC120499.JPG PC120498.JPG
I find it odd that in my black bean burrito, black beans aren’t the first ingredient, but they are in his. Interesting? No? Just me? Okay.
I was super full from dinner that I didn’t snack all night. I woke up this morning and had my favorite:
PC120504.JPG
2 Eggo NutriGrain WW waffles with 1/2 a Macintosh + cinnamon and coffee times 2

Lunch looks familiar, yes?

PC130512.JPG PC130511.JPG
Sweet potato with black beans and plain Chobani + Frank’s, and a WW bread nub with a tbsp of hummus
Snackies:

PC130513.JPG PC130516.JPG
Hot cocoa + more clems

I also diagnosed Allie from The Notebook with Stage 23of Alzheimer’s Disease, in which there is a moderately severe cognitive decline and intensified confusion, including being unable to recall the names of family members and life events.

Then I went to the gym with my 38-page study guide. I spent an hour on the treadmill, alternating walking 3mph on an level 8 incline with walking 3.5mph on a level 9 incline. There is quite a difference, believe me.
Dinner was breakfast:

PC130528.JPG PC130529.JPG PC130531.JPG
Arnold’s MultiGrain sammie thin with three egg whites, a plain LC wedge, and organic ketchup + a Fortune apple with leftover Chobsies + cinnamon
I saw the Fortune apples at the grocery store yesterday and picked some up – I’d never heard of them before. The sign described them as slightly crisp and slightly spicy. I thought spicy was a good description – hard to explain, but true! They were both crisp and a little mealy, which I generally don’t like (hence why I despise Red Delicious) but I liked it here, since it wasn’t too much meal.
I was going to head back to school late tonight, but it’s raining and I hate driving at night, especially in the rain. What can I say, I’m not the best driver. Plus how can I turn down another night in the world’s most comfortable bed? Even if it means getting up at 5:30 …

After spending 6 hours in the library yesterday and 8 and half there today, it’s depressing to know that classes aren’t even over for the semester yet. Even though I’ve been super busy, I have found time to try a few new purchases:

PC040384.JPG
Siggi’s Icelandic Skyr in Orange & Ginger

Siggi’s Icelandic Orange & Ginger Skyr Opinion
Taste:
The tartness of the yogurt goes really well with the refreshing citrus and ginger – amazing! 5/5.
Texture: Thick like soft serve! With real tiny ginger chunks at the bottom! 5/5.
Fill Factor:
Great for a snack! Definitely need toppings and/or a piece of fruit for a meal. 4/5.
Ingredients: “Pasteurized skim milk, agave nectar, candied ginger, orange extract, live active cultures, vegetable rennet.” 5/5.
Comments: This was so different than any other yogurt I’ve had. As with the plain and blueberry flavors, I LOVED it and wish they were sold at stores other than Whole Foods for a better availability and also cheaper! But this is definitely a product I’ll go out of my way to get at WF.

Amy’s Black Bean Burrito slathered with Fage and Frank’s

Amy’s Black Bean Burrito Opinion
Taste:
Yummy! Love the black beans, veggies, and spices. Pretty authentic tasting for a frozen burrito. 4/5.
Texture:
Mostly mush, but that could be my fault since it’s been in freezer for a while and I used the microwave to heat it up. Could still see beans and other veggies though! 3/5.
Fill Factor:
For only 280 calories, I ate it with a couple carrots and some sugar snap peas and I was set for the rest of the night. 4/5.
Ingredients:
“Organic whole wheat & wheat flour, filtered water, organic onions, organic black beans, organic potatoes, organic corn, organic broccoli, organic bell peppers, organic tomatoes, organic kidney beans, expeller pressed high safflower oil, sweet rice flour, spices, organic garlic, organic green chiles, sea salt, organic jalapeno peppers, tapioca flour.” Mostly organic and vegan! 4/5.
Comments:
This was so delicious – perfect for when I’m craving Mexican without the frightening nutritionals. 8g of fat (1g saturated), no trans fat or cholesterol, 9g of protein and 580mg of sodium – kind of high, but not nearly as high as most canned soups and other frozen meals!

Choc Peppermint Stick.jpg
Chocolate Peppermint Stick Luna Bar

Luna Chocolate Peppermint Stick Opinion
Taste:
“I’m eating a thin mint.” 5/5.
Texture:
Chewy and crunchy like a rice krispy treat with a yummy peppermint-bark like icing! 5/5.
Fill Factor:
Held me over for around 3 hours yesterday, could have gone longer! 5/5.
Ingredients:
Very long list, but nothing too scary – and 70% organic! Plus lotssss of vitamins and minerals!  4/5.
Comments:
Thin mints I’ve missed you in my life. Now I don’t have to. Dear Luna, make a magical bar that tastes like a Samoa. Thanks.

ss_29OdwallaProteinBar.jpg
Odwalla Super Protein Bar

Odwalla Super Protein Bar Opinion
Taste: Nothing special. Subtly sweet, but with no really specific taste aside from the raisins. Very slightly nutty from the soynut butter.  2/5.
Texture: It stuck to my teeth when biting into it, but was very chewy and grainy in a good way. Perfect density.   4/5.
Fill Factor: Held me over for 4 hours! That’s what 14 grams of protein will do for you. 5/5.
Ingredients: Again, pretty long but nothing terrifying. A lot of soy products (nutbutter, protein, etc.) so not for those who try to avoid processed soy.  3/5.
Comments: Definitely nothing great here, but I’d try it again, especially since I know it fills me up! It’s a really good size bar too.

Like yesterday, my packed library lunch was a spinach, hummus, and raisin sandwich on a deli flat and an apple with cinnamon.

PC040395.JPG
PC040399.JPG
Yesterday’s snack was the Chocolate Peppermint Stick Luna, today’s was the Odwalla Super Protein. Are we sensing a trend? It continued into dinner:
IMG00074.jpg IMG00073.jpg
Crackberry pic of a Morningstar Mushroom Lovers burger with a plain LC wedge, Frank’s and spinach in a whole wheat wrap+ sweet potato fries and ketchup.

Dinner was so good and VERY filling – I’m still stuffed.
After dinner I headed to Big Y to pick up some supplies for the week:

  • Grapes
  • Macintoshes
  • Tub of hummus
  • Plain 0% Chobani
  • Carrots
  • Sweet potatoes
  • Black beans
  • Luna bars – Chocolate Peppermint Stick, White Chocolate Macadamia Nut, Lemon Zest, and Peanut Butter Cookie

I’m hoping it’s not too frigid for a run tomorrow morning, but at 7am it’s supposed to be 26 degrees – guess I’ll be bundling! Hope they salted the sidewalks, they were still kind of icy this morning. At least I won’t get frostbite de-snowing my car with a tupperware lid again ….

Upcoming finals = sporadic posts. I still have one more week of classes before that torture begins and I’m trying to catch up on all the work my professors thought it would be fun to assign us the week before finals. I think they get paid extra for the amount of tears seen around campus this time of year.

PC050422.JPG
Starbucks Thanksgiving Blend and OPI’s Mrs. O’Leery’s BBQ.

Yes, Thanksgiving blend. I just went in there and asked for Christmas blend, but they’re still brewing the Thanksgiving blend. That’s what you get for Storrs, CT, where the cows outnumber the people.
Why are so many foodie items so difficult for me to find? I finally got pumpkin pie yogurt at the end of November, so naturally I’ll be drinking Christmas blend by Valentine’s Day.
I really wanted to run this morning because the snow is so pretty! But, I decided to take today off after yesterday’s incredibly slow 4 miler (41 minutes). Yeah, my legs and I are fighting. So I thought I’d give them today to cool down. Probably best that way, since the roads are fine but the sidewalks are still icy.
Trying to write a cover letter now .. in the cafe because the library isn’t even open yet.
