Lunch

Good afternoon!

Little did I know that yesterday when I achieved a new yoga pose for the first time (wheel!) that it was National Yoga Day! Little things like that make me happy :0)

Yesterday at the gym I rocked out on the elliptical for 45 minutes, did some planks, crunches, and yoga moves in the mat area. When the middle aged woman next to me whipped out a HEADSTAND and several other intense yoga poses without toppling over, I threw out a few wheels in celebration. She didn’t seem to notice. I held back an intense desire to strike up a conversation about yoga with her and ask her to be my guru. After one ab machine, I gained the courage to do a couple arm machines – um … arm extension is awkward. I started out with 30 lbs. = HAHAHA I managed to get out 12 reps, then switched to 15 lbs. for 12 more reps, and down to 10 lbs. for the final set. I legitimately have no arm/upper body strength. Really must work on this. I also did 3 sets of 12 reps on the overhead press, again on a sad 10 lbs. Barely got them out. To make myself feel better about my lack of arm strength, I sped through a mile on the treadmill, incline 1, in 9 minutes.

After stopping to get my beastly eyebrows waxed and literally pick up apples, oranges, and carrots at Big Y, I headed on home to make lunch.

P1230241.JPG
P1230242.JPG
Buffalo crackwich with spinach + a pink orange!

There was another half to that wrap that made its way into my mouth before the camera could capture it. Soooo my oranges are pink! I got confused and thought I bought a mini grapefruit or something by accident, but nope! The sticker on the other one is pink and says they’re Cara Cara Navels from Sunkist! I never knew there were pink oranges, but it was a fun surprise!
This lunch was soo good and satisfying! For dinner, I headed over to the restaurant at the Student Union with two of my sisters. Like other times, I got the “Sesame Encrusted Grilled Tuna Steak with Wasabi MayoSesame encrusted grilled tuna steak topped with baby field greens, avocado, red onion & cucumber with spicy wasabi mayo on a toasted kaiser roll. Served with a mixed green salad or chips.”

No pic, sorry! It’s not very attractive anyway, but I do love it! I got the sandwich on multigrain bread instead of the white kaiser roll, wasabi mayo on the side (it’s super super spicy!) and ate it open face on only one slice of bread. I always get the wasabi mayo on the side because it is STRONG, so I just dab some on with my knife as I go. On the side, I got a mixed green salad with their champagne vinaigrette. I dipped my fork into the dressing before stabbing my mixed greens – perfect amount!
For dessert, I stole the two maraschino cherries off of my friends’ brownie sundaes – yum!
After dinner, we headed over to the NPHC step-show. The NPHC is the umbrella organization for historically black fraternities and sororities. If you don’t know what stepping is, YouTube it NOW! It’s so amazing and entertaining. It was really fun but we were exhausted (22 year olds have early bed times) and left kind of early. Before bed, I snacked on some popcorn:
P1230243.JPG
Popcorn is quickly becoming my nightly go-to snack. I love the crunch and salt! Must restock …
I woke up this morning – arms and back sore from machines and the wheel! – and repeated my YogaDownload.Com favorite podcast of Morning Flow #1. Because I was a little sore, getting into wheel was a bit more difficult today, but I did it!
Breakfast was a repeat:
P1230244.JPG P1230245.JPG
Coffee with skim and PureVia, Plain 0% Chobz, MultiGrain Cheerios, and banana with a side of yoga mat

After breakfast I did some work in bed and eventually headed over to the school gym. I had a lot of energy and thought I wanted to run, but after 5 minutes on the treadmill, I got bored of staring at the pool and switched to elliptical. I spent an hour on a random setting and did some reading for Nutrition Through the Lifecycle. My friends came and made fun of me for doing school reading the first week of school, but I like it! And also, it’s science, which I really need to keep up with as I’m not so great at it.
Lunch was made quickly after returning:
P1240246.JPG P1240247.JPG P1240248.JPG P1240249.JPG
3 egg whites in a Flat Out with a Garlic & Herb LC wedge, Frank’s and salsa + a Gala with cinnamon

I accidentally opened the cap off the cinnamon bottle instead of just flipping it up, and so got a pile of cinn on 3 apple slices. Oh well, I just shook it off and made a cinnamon dipping pool! The wrap was so good – Flat Out wraps are so fluffy and soft – they go great with egg whites!
Right now I’m feeling kind of snacky .. better go find something!

Hiii!

Sorry I’ve been absent – I needed a few days to regroup, pack, move back into school and settle. I’ll just recap today for now, and if I find anything exciting in the last few days’ pictures, you’ll be the first to know!

I woke up feeling good after a night at the bar with my friends – it was so so so so so fun and I couldn’t be happier I went! I just hung around for a little, cleaning and stuff before hitching a ride to the co-op (aka the bookstore) with one of my sisters. I picked up my books and some other goodies – including a new Vera Bradley wallet!

P1180218.JPG

We also headed to Walmart where I picked up an $18 TV stand – which I then took home, unpacked and assembled by myself! Screws, nails, and all! I’m extremely proud of myself for putting something together. I’m awesome. While being productive, I ate:

P1180213.JPG
Plain Chobani, banana, MultiGrain Cheerios

Dorm lighting = bad pictures.
Eventually I also made a super small lunch.
P1180217.JPG
MultiGrain Flat Out wrap with roasted red pepper hummus

P1180219.JPG
Whole Foods fruit salad

After a sorority meeting, I made my way over to disappointment the dining hall. I feasted on tomato soup, whole wheat toast with Smart Balance, and some steamed veggies. Yum. I also snacked on half a chocolate chip z-bar:

P1180220.JPG

At the surprisingly not packed gym, I ellipticalled for 35 minutes – 5 minutes on crossramp 10 and resistance 7 and 2 minutes on crossramp 12, resistance 10 repeated. After 30 boring minutes on a new and not improved stair stepper randomized level 7 workout, I did some ab work and called it a night. I also tried to catch up on blog reading while working on my fitness, but my Google reader is in the triple digits so I’m still wayyyy behind on reading and commenting.

I packed my lunchers for tomorrow:

P1180221.JPG
Spinach, hummus, and raisins on a Flat Out Honey Wheat wrap

P1180222.JPG
Orange sections

And snacked on an organic pinata apple I picked up at Whole Foods:

P1180223.JPG
With cinnamon, obviously

My Big Y near school started carrying Flat Outs! I was so excited I grabbed two flavors to try – MultiGrain Flax and Honey Wheat! Love ittt!

I packed lunch due to my schedule for tomorrow’s first day of classes:

  • 8:45 – Breakfast with a couple of my sisters at the dhall
  • 9:30-10:45 – Nutrition Through the Life Cycle – SO SO excited for this class!!
  • 11-12:15ish – Gym
  • 12:30-1:45 – Medieval English Literature – so not excited for this class – except for the fact I’ll be eating in it
  • 2-3:15ish – Shower, change, snack
  • 3:30-4:45 – Emotion Through Literature and Film – pretty excited for this class!

Obviously, my appetite is off today – as it has been the last couple days. I know it’s due to a combination of things going on – stress, sadness, moving back to school, my new sleeping pill, etc. I’m sure that once I get back into the swing of things, I’ll be back on track with hunger! At least, I hope so – not wanting to eat/what I want to eat is not cool with me. I like to know what my body wants – I like cravings. Yes, I just said that.

Anyway, I’m off to bed early – first day of school tomorrow! I’ll be back to commenting regularly soon, I promise!

Good afternoon bloggies!

First of all, head over to Iowa GIrl Eats’ Amy’s Kitchen giveaway to win some yummy Amy’s products!!

Last night I had a delicious pumpkin pie parfait for dessert!

P1120159.JPG
As usual, I mixed 1/2 cup of pumpkin with one egg white and some pumpkin pie spice and microwaved it for 4 minutes. While it was caking-up, I mixed a few dollops of plain Fage with vanilla extract and more pumpkin pie spice. Topped off with a plank of Kashi Pumpkin Spice Flax crunchy granola bar – yummmm :0)
I used the Farmer’s Market (I think that’s the brand) organic pumpkin instead of my usual Libby’s and noticed a difference – it cooked through more, but didn’t taste as good. I wonder why? Weird.
Breakfast was on the small side since I was heading to the gym pretty soon after:
P1120160.JPG
3 egg whites + plain LC wedge and Frank’s, half a Fuji with cinnamon, and half a multigrain English muffin with Truvia and cinnamon

I took it super easy at the gym:
  • 20 minutes on the stair mill at level 5, rolling hills setting
  • 20 minutes on the elliptical at level 7, random setting
  • 1 mile run in 9:29:
  • – Lap 1 at 6.0mph, incline 2
  • – Lap 2 at 6.2mph, incline 1.5
  • – Lap 3 at 6.4mph, incline 1
  • – Lap 4 at 6.6mph, incline 0.5

I was feeling pretty bossy today a la a certain Snackface. Plus I was off to the dentist and wanted to feel good about myself before squirming in pain for 30 minutes.

After the most painful dental cleaning of my life and wondering what I ever did to offend this woman, I comforted myself with a pair of new jeans. Going back to school in a few days = packing in the shopping while I can.
Snackytime:

Fuji with PB2!!!!

PB2 Opinion
Taste: I tried it on its own first – not exactly like peanut butter, but pretty close, and good in its own way. On the apple, I couldn’t tell the difference at all! 5/5.
Texture: Exactly like creamy peanut butter. 5/5.
Fill Factor: With an apple, I’m satisfied and sure it will hold me until dinner. 4/5.
Ingredients: “Roasted peanuts, salt, and sugar.” Nothing funky at all! Could do without the sugar, but no biggie. 4/5.
Nutrition:
Per 2 tablespoons, 50 calories, 2g of fat (0g saturated, trans, and polyunsaturated, 1g monounsaturated), less than .1mg of cholesterol, 80mg of sodium, 3g carbs (0g fiber and 2g from sugar), 6g of protein!. 4/5.
Overall: Loved it! I’m so happy I tried it out – I’ll definitely be ordering a jar! I can’t wait to try it in other things!
5/5.

See you all after dinner!

Good evening bloggies!

I headed out to the mall after this morning’s post and came home with some goodies! Two new nail polishes – Status Symbol, a bright pink by Essie, and We’ll Always Have Paris, a rich plum by OPI. Love them! Status Symbol is drying on my nails right now. I love deep, dark shades for winter and fall, but I also like switching them out with bright, cheery colors for warmth!

I also got these beauties:

P1120151.JPG
Hello, lover.

I’ve been wanting boots like these for a year. $100 from $190. Thank you, Steve Madden.

I came home to more goodies!

PB2!! I took the plunge and ordered the sample pack of PB2 and Chocolate PB2. I’m so excited to try these out – there will definitely be a full review involved as well!
Breakfast held me over for a surprisingly long time – 5 hours, including shopping cardio! However, I was verging on becoming a hunger monster when I got home and quickly assembled the first thing I could think of:
P1120138.JPG
Healthy tuna salad in a Joseph’s pita with half a sliced Fuji

I mixed a can of tuna with a few tablespoons of plain Greek yogurt, a large squirt of deli mustard, diced celery, pepper, and paprika and threw half the mixture in my pita. Before the gym, I had a snack:
P1120139.JPG
Key Lime Pie Larabar

I ate half before my workout and half after. This is one of the bars I received from Larabar for commenting on their blog during the holidays. Not sure I would have bought this flavor on my own, but I’m glad they did!
Key Lime Pie Larabar Opinion
Taste: So good! Sweet, tangy, and citrusy. I was “mmming” out loud the whole time. Not a strong lime flavor, but it’s definitely there. I’ve never had key lime pie so I can’t compare it to the real thing. 5/5.
Texture: Moist, chewy, nutty. 5/5.
Fill Factor: Held me through a 5 mile run and until dinner! 5/5.
Ingredients: “Dates, cashews, almonds, unsweetened coconut, lime juice concentrate.” I feel like lime juice concentrate should be higher up, since it’s the flavor so 4/5.
Nutrition: On the high end, calorie-wise, with 220 per bar. 10g of fat (3.5g saturated, 0g trans fat, 1.5g polyunsaturated, 4.5g monounsaturated, no cholesterol or sodium, 330mg of potassium, 31g of carbs (4g of fiber and 24g of sugar), and 4g of protein. 4/5.
Overall: Loved it! I’ll definitely be buying this flavor!
5/5.

At the gym, I ran 5 miles in 47:13 doing this routine:
  • Mile 0-0.5: 6.0mph
  • Mile 0.5-1: 6.2mph
  • Mile 1-1.5: 6.1mph
  • Mile 1.5-2: 6.3mph
  • Mile 2-2.5: 6.2mph
  • Mile 2.5-3: 6.4mph
  • Mile 3-3.5: 6.3mph
  • Mile 3.5-4: 6.5mph
  • Mile 4-4.5: 6.4mph
  • Mile 4.5-5: 6.6mph

So every half mile, I added .2mph and then subtracted .1mph on the next half mile. I also threw some inclines in there randomly, for giggles.

Today’s gym session led me to today’s Tuesday Top 5 – The Top 5 Weird Things I Saw at the Gym – today, because obviously there are new phenomena every single visit. Except there were only 3 today, so bear with me.

The Top 3 Weird Things I Saw at the Gym (in no particular order of strangeness)

  1. This was more of a smell. COLOGNE. Strong, strong cologne. Seriously – so unnecessary and radiating from the elliptical across the aisle (?) from me and legit making it hard to breathe. Stop. Thanks.
  2. Jean leggings. Capri jean leggings. With painted on stitched pockets and seams. Now, I am an advocate of the “jegging” – comfortable, with the illusion of effort. I wish I had invented them myself. However, these were not stylish, good looking, or passable for actual jeans.
  3. A man with shoulders as wide as he was long. Boys, this is not a good look. “Gorilla” is not a good look. This is not attractive. It is unnatural. We, as humans, evolved from this look. Let’s keep on evolving.

If I was able to add two more things, not from today, I would add in the man who sings to himself on the treadmill – yes, sir, others can hear you, even if you have headphones in – and the man who was angrily rapping at the elliptical, 8 Mile style last week.

Dinna:

P1120147.JPG
P1120148.JPG
P1120149.JPG
Spaghetti squash with onion, peas and brussels sprouts and a multigrain english muffin with garlic salt

I mixed a plain Laughing Cow wedge into the marinara sauce, heated in the microwave before topping. We were out of parm and I love peas in pink sauce with pasta. Obviously, it didn’t taste the same, but I’d eat it again! Sooo many peas overflowing onto my plate. I love peas!

So – what should I do with my PB2????

Good afternoon bloggies! I wasn’t actually hungry after posting last night and thought it might help me sleep if I wasn’t digesting a snack. I don’t know if that’s why, but I actually slept restfully though the night! I’m going to try to stop snacking after dinner for the next few nights to see if it helps me sleep better.

I found the new Chobani flavors at Stew Leonard’s the other day and bought two of each! I used the raspberry in today’s breakfast:

P1100114.JPG
Raspberry Chobani and Kashi Heart to Heart

Sooo good! Also had a coffee with skim and Truvia :0)

My friend Emily IMed me and asked me to meet her at the gym. My hamstrings are still a little sore and after my bad run yesterday, I just wanted to take it easy – luckily, so did she. I did 2 miles on the treadmill in 19:30:

  • Mile 0-0.5: 6mph, incline 1
  • Mile 0.5-1: 6.1mph, incline 1
  • Mile 1-1.3: 6.1mph, incline 2
  • Mile 1.3-1.5: 6.1mph, incline 1
  • Mile 1.5: 6.2mph, incline 1
  • Mile 1.6: 6.3mph, incline 1
  • Mile 1.7: 6.4mph, incline 1
  • Mile 1.8: 6.5mph, incline 1
  • Mile 1.9: 6.6mph, incline 1

I headed over to the elliptical and watched The Biggest Loser: Families while I ellipticalled up and down a mountain on level 7 for half an hour and finished up with 10 minutes on the stair mill. I did on a minute on level 3, alternated minutes on levels 4 and 5, and finished with a minute on level 3. I also stretched my hamstrings out a lot and they feel so good :0)

Lunch was essentially a snack plate:

P1110118.JPG
3 egg whites with salt, pepper, and Frank’s in a Joseph’s WW tortilla with a plain LC wedge and salsa + carrots and garlic hummus + half a Granny Smith with cinn

Yum! Off to shower and clean my room! What are you up to today?

Good evening bloggies! First of all – I’m trying out a new layout and a new picture size. I think the default ratio on ecto is a tad too big. Also, I am LOVING getting all of your comments – keep them coming! I also respond to each one, so go back and check if you wrote me a note on my last post!

Where did we leave off? Dinner, last night .. turned out to be super boring. Mah b.

I got expectedly snackalicious:

It turned into a giant purple mess of antioxidant-y goodness – loves it!
Today. Ohhhh, today. Well, I haven’t been sleeping that well at home this break, which is incredibly unusual for me, as I always sleep the best at home, in the sense of restfulness and not waking up. Every single night this break, I have woken up around 3:30. Sometimes I can toss and turn and fall back asleep, sometimes I’m in and out until about 5:30 when I actually fall asleep again. But this morning, I could not get back to sleep. I turned my TV on for white noise. I flipped channels. I read blogs. At 6ish, I finally got up and did the 20 minute free podcast of Morning Flow #1 from YogaDownload.Com – ahhhh. I’m pretty sure I’ve finally fallen in love with yoga, to the point where I crave doing it, all thanks to that one-hour class and Heather.
I made coffee, watched some TV, read some more blogs, tried to nap, gave up, ate breakfast:
P1090094.JPG
Fuji, pom, MultiGrain Cheerios with warm skim

I thought about going to the gym. I continued the TV, blog, and nap attempt cycle a few times. I made lunch.
P1100097.JPG
Tuna salad in a Joseph’s wrap with some granny covered in cinn

Santa’s not going away anytime soon. Well, until I’m back at school a week from today. Blech.
I dressed myself for a Target and gym trip, felt snacky, popped a cookie:
P1100102.JPG
Peanut Butter Cookie Larabar

and immediately felt too full. Fail.
I bought some socks, a new pair of sweet royal blue running shorts, and the new pina colada Orbit flavor at Tarjay, and still super full, headed to the gym where I had a hideous run. Hideous. I won’t dwell on the worst run I’ve had in at least two months, but I finished 4 miles in 37:37 and walked another 20 or so minutes. My hamstrings are gloriously sore (but not too too bad) from yesterday’s amazing yoga. The run and walk made them feel fab but they’re still pretty tight – in a good way. I love sore muscles!
I snacked on some very friendly clementines while I made din:
P1100106.JPG P1100107.JPG
They’re only a couple weeks late. Dinna:

Baked sweet potato rounds with s, p, and chili powder + hummus and spring mix on fluffy whole wheat

Nom. My favorite sweet potato parts were the burnt ones! They taste like toasted marshmallows. I need to remember to slice much thinner slices for the crunchy, fry-like texture. Actually, I might do a batch super thin, like some of mine were, so that they’re like chips! Honestly couldn’t tell the difference. Oh sweet potato, you are the perfect food.
Congrats to all the Disney marathoners! Meghann, Caitlin, Ashley, the twins, Megan, and everyone else did AMAZING! My friend Jess, who I’ve known since kindergarten and ran (she ran, I walked) cross country with in high school finished in 3:37.48 – she is obviously beyond awesome and qualified for Boston!!!!!!!! I’m so proud of her! AND it’s her birthday! She celebrated by running a marathon. I went shopping and ate a lot of Japanese and had cake. It’s cool.
I really want to make an inspiration/goal board a la Gina for 2010. I have a few ideas of what to put on it, but it definitely needs to be fuller :0) Did you make an inspiration board? What is or would be on it?

I’m feeling snacky!

My arms are TIRED from some amazingggg yoga I just did! But first – lunch!

Tuna salad with romaine in a Joseph’s pita with pomegranate arils

I added some paprika, salt, and pepper to the leftover tuna salad before assembling my pita – extra tasty today! My mom and I went out to my grandma’s and this week’s 24974th grocery trip. I snacked on half a White Chocolate Macadamia Lunabar while we were out, and half when I got home. I also stopped for some much needed Pike Place caffeine.
P1090081.JPG P1090082.JPG P1090084.JPG
White Chocolate Macadamia Luna Bar Opinion
Taste: Super sweet! Lots of white chocolately, nutty goodness. Kind of like a rice krispy treat. Not enough macadamia taste for me though!   4/5.
Texture: Moist, chewy, and crispy with a white chocolate drizzle and bottom frosting. No crunchy nuts! 4/5.
Fill Factor: Broken up into two parts, got me though afternoon errands and a mildly intense yoga session! 5/5.
Ingredients: “LunaPro (Soy Rice Crisp [Soy Protein Isolate, Organic Rice Flour], Organic Toasted Oats, Organic Roasted Soybeans, Organic Soy Flour, Organic Flaxmeal), Organic Brown Rice Syrup, Organic Coating (Organic Evaporated Cane Juice, Evaporated Palm Kernel Oil, Organic Soy Flour, Organic Soy Lethicin, Organic Vanilla), Organic Macadamia Nuts, Inulin (Chicory Extract), Organic Macadamia Nut Butter, Vegetable Glycerin, Organic Oat Syrup Solids, Organic Sunflower Oil, Sea Salt, Natural Flavors” plus lots of vitamins and minerals. Long, yes, but nothing scary and mostly organic.   4/5.
Comments: Loved it! I can see it being too sweet for some people, but this is not a problem I have. I’ll definitely be buying this flavor again and again!

HEAB‘s new post alerted me to YogaDownload.Com’s sale, so I picked a few classes and got them for 40% off! Use the code NewYearsRez to get 40% off your order too.  Thanks Heather! I purchased:
  • Baptiste Power Vinyasa Yoga #3, 45 minutes
  • Yoga Sculpt #1, 30 minutes
  • Yoga for Weight Loss #1, 6 minutes

I previewed the slides for each class before purchasing them and did the whole hour-long yoga for weight loss class! It was exactly what I wanted – challenging but do-able, with new (to me) poses and poses I really want to achieve/improve on. It was such a good stretch and my arms and quads are definitely tired! All those chair poses and flows from up-dog to down-dog to chaturanga are going to show themselves tomorrow. Sooo good!

I wonder what’s for dinner …

Pomelo!

P1070046.JPG P1070049.JPG

Related to the grapefruit, this guy tasted like a super mild and extra sweet version of a pink grapefruit – yum! That super thick rind does NOT want to peel off and reminds me of cotton candy or insulation in its texture.

.P1070050.JPG P1070051.JPG
Looks like lungs!

P1070056.JPG P1070057.JPG

I chopped some up and paired it with plain Chobani and pomegranate arils …

P1070058.JPG

And then covered the mess in MultiGrain Cheerios!

Pre-gym, I had half a PB cookie Larabar – one of my favorite flavors!

P1080061.JPG

At el jimnasio, I ran a 5k:
  • Mile 0-0.75: 6.4mph, incline 1
  • Mile 075-1: 6.4mph, incline 2
  • Mile 1-1.5: 6.5mph, incline 1
  • Mile 1.5-2: 6.5mph, incline 2
  • Mile 2-2.25: 6.6mph, incline 1
  • Mile 2.25-2.5: 6.6mph, incline 2
  • Mile 2.5-2.75: 6.6mph, incline 1
  • Mile 2.75-3: 6.6mph, incline 2
  • Mile 3-3.1: 7mph, incline 1

Finished in about 28:40, with a 9:14 minute per mile average. I jumped over to the elliptical for 15 minutes on mountain setting, level 7 and finished with 15 minutes on the stair mill, rolling hills level 5. It was a really good workout! Not too hard and not too easy – juuuuust right!

Lunch was quickly assembled as soon as I got home:

P1080062.JPG
Joseph’s pita with LC Garlic & Herb wedge, black beans, avocado, salsa, and Frank’s + more pomelo

AKA Tex-Mex-Mess. It could have used something else .. or a better job mixing it up? Next time … I also snacked on an unpictured apple mid-afternoon.

Dinner was SO GOOD and the perfect amount of food!

P1080066.JPG P1080067.JPG P1080068.JPG P1080069.JPG

La cena perfecta consisted of:

  • Half a can of tuna with celery, plain Chobani, and deli mustard with romaine on a Joseph’s tortilla
  • Sweet potato half moons roasted in the oven, with salt, pepper, and organic ketchup
  • Overly roasted brussels with s&p

I honestly wasn’t hungry the rest of the night. I snacked on a piece or two of pomelo with some seltzer because I was thirsty and it sounded good (which it was), but I didn’t need my usual 4th meal. Yay filling food!

Last night I watched Reservation Road a la Netflix, with some of my favorites – Joaquin Phoenix, Jennifer Connely, Mark Ruffalo, and Elle Fanning, Dakota’s little sister. She looks just like her! I honestly thought it was Dakota until I IMDB’ed it. I didn’t know it when I started watching, but they filmed part of the movie in Connecticut! They even shot at my FAVORITE breakfast/brunch place – The Olde Bluebird Inn in Easton. I was seriously so excited when I recognized it. They also shot at Lake Compounce, an amusement park I’ve been to multiple times, including with my campers the past few years – so cool!

Brekkie:

Pumpkin Pie Parfait!

Also known has 1/2 cup of pumpkin, pumpkin pie spice, and one egg white microwaved for 4 minutes, topped with plain Chobani mixed with vanilla extract and TruVia and sprinkled with a Kashi Pumpkin Spice Flax granola plank. Yum.

I really wanted waffles for breakfast but I opened the freezer and tried not to cry when there weren’t any :(. I was in a bit of a time crunch, so making some was a no-go. I settled.

MultiGrain Cheerios with skim and frozen blueberries

I never had blue milk before this morning! I had a doctor’s appointment, after which my mom and I headed into New Haven to have lunch at Claire’s Corner Copia, a fairly famous vegetarian restaurant. Sorry for the BlackBerry pictures!

I had the roasted vegetable salad with feta, which came with a grainy roll (not sure if it was multigrain or whole wheat?) and an iced tea. Honestly, it wasn’t good. The vegetables were pretty oily – so much so that the bed of spinach they came on got soaked. The veggies were cold. I don’t get cold roasted vegetables? They were also pretty tasteless because of the oil – I really don’t understand why people drench things in oil. It takes all the flavor out! Regardless, I was starving and ate all the veggies minus the peppers but left most of the lettuce and half the feta (there was a lot more than pictured). I also had half of the roll, which is a lot bigger than it looks. The roll was the best part! It was warm and so doughy, fluffy and chewy – perfect bread! I took the other half home.
After running some errands, I was still hungry when we got home, so I snacked on an exceptionally good Fuji before some nappage occured:

Eventually I got up and made a random dinner:

Egg white scramble with broccoli, onion, half an LC French Onion wedge and organic ketchup, plus the other half of my roll – half with strawberry jelly and half with the other half of the LC French Onion wedge

I heated up the bread in the microwave and it was still so.damn.good. Best bread ever? Maybe.
I was planning on taking today off from the gym, but I got so bored I ended up getting dressed, but then talking myself out of it again. I went back and forth for a while until Grey’s came on Lifetime and made my decision for me. Of course I got exhausted right after that so it was a good call. I just snacked on some carrots and sriracha:

Pomegranate Chobani with Kashi Heart to Heart

I was meeting my friend at the gym at 1:30 so I had a super light lunch/snack around 12:30:

Leftover roasted veggies

Yes, I eat on my floor on my yoga mat a lot. It’s fine. I also threw a few salted roasted almonds in my mouth on my way out the door to the gym.
I got there a few minutes before my friend and ran .38m waiting for her. We moved to other treadmills since someone snagged the one next to me just as she was walking in. We did 5 miles in 46:50. I played with the incline a little and speed a bunch as usual.
  • Mile 0-1: 6.2mph, incline 1
  • Mile 1-1.5: 6.3mph, incline 2
  • Mile 1.5-2: 6.3mph, incline 1
  • Mile 2-3: 6.4mph, incline 2
  • Mile 3-3.75: 6.5mph, incline 1
  • Mile 3.75-4: 6.6mph, incline 2
  • Mile 4-4.5: 6.7, incline 1
  • Mile 4.5-4.75: 6.8mph, incline 1
  • Mile 4.75-4.9: 7mph, incline 1
  • Mile 4.91: 7.1mph, incline 1
  • Mile 4.92: 7.2mph, incline 1
  • Mile 4.93: 7.3mph, incline 1
  • Mile 4.94: 7.4mph, incline 1

  • Mile 4.98-5: 7.8mph, incline 1

I was DRIPPING after this workout, but felt SO GOOD. I heart running.

Snacky-poos:

Cortland with cinnamon

Carrots and sriracha

Dins:
P1060022.JPG
Steamed brussels and carrots with S&P, steamed zucchini with oregano, BBQ tofu

Yeah, I don’t know why that would be enough food either. It was quickly supplemented.

Multi-grain english muffin with a Laughing Cow French Onion wedge

Why is bread and cheese so simple but so perfect? My mom picked up Thomas’s Smarter Start Light Multi-Grain english muffins. They’re not whole wheat, but they’re so doughy and delicious and only 100 calories! It’s love.
I added a “Workouts” page to the blog so that I have something to easily and quickly track what I do/don’t do everyday. I think I’m also going to make a page with my grocery staples – what do you think? I also have a serving of tofu I haven’t done anything with yet – any suggestions? I like buying tofu but it’s hard for me to figure out how to cook it once I buy it.
Snacktime! Happy blogging!
